Video recipe for making pancakes in water without eggs or yeast

The author of the video tells how to prepare fluffy pancakes using water and soda, but without kefir and eggs. With this dish you can diversify your Lenten menu and simply prepare a quick breakfast from a minimal set of products.

Subtleties of cooking

Pancakes are an ancient dish. Previously, it was cooked with rye flour and rye sourdough was made specially for this. Another type of pancake, after which the Maslenitsa holiday was even named, is nalistniki. We are sure that every housewife has her own secrets, but it is always interesting to learn new ones in order to please your family.

It seems like making pancakes couldn't be easier. But they often turn out flat, too greasy, or burnt while remaining raw inside. What to consider?

  • Sugar is an important ingredient for dough. Without it, pancakes made with yeast and water (with or without eggs) simply will not rise. The yeast will not start to sparkle, and the dough in the pan will immediately fall off. As a result, the pancakes will be flat and unappetizing. But too sweet dough immediately begins to burn in the oil, and the inside of the pancakes will remain raw. So you need to add sugar strictly according to the recipe.
  • You also need to add dry ingredients strictly according to the recipe, and you can adjust the thickness of the dough using water. Add liquid gradually, constantly stirring the ingredients. If you immediately pour water, it will be difficult to achieve the correct consistency of the dough by adding flour. With each new spoon of flour, the proportions are disrupted, which means the dish may simply not turn out as tasty.
  • The consistency of the dough should not be liquid– it should not flow like water, but drip in buns from a spatula or spoon.
  • Oil temperature is also an important component. It needs to be adjusted so that the pancakes are fried, but do not burn from the first seconds of frying. Also The amount of oil is also important: it should not be small, otherwise the dough will not rise without sufficient temperature. But pancakes shouldn’t float in oil either.
  • Part of the wheat flour can be replaced with buckwheat, oatmeal or rye. But you should not completely exclude wheat flour from the recipe - only it contains the gluten necessary for kneading.
  • The sequence of entering the ingredients is not important - you can simply place everything in a bowl and mix.

How to vary the recipe

  • Instead of water, you can add whey to the dough. Or cook lush
  • You can add grated apple, grated pumpkin to the dough, or prepare original ones for the delight of your household.
  • Pancakes are also unsweetened. For example, cereal or vegetable ingredients are popular. Try cooking - another way to diversify the daily menu for the whole family.

A little about yeast

The difference between dry and live yeast is the packaging in which the live yeast is stored. Their composition has not changed since the second half of the 19th century (the time of invention).

Types of yeast:

  • Live pressed. They are the easiest to use - you just need to crumble the required amount into flour or grind with sugar. But their consumption is the highest, and their shelf life is the shortest.
  • Dry instant. Granules with fungi in a shell, which must be softened before activation. To do this, simply mix them with flour, from which the yeast will take the necessary moisture. But they are the most powerful in operation, so they are often used by chefs.
  • Dry active. The fungi dry out and become like microscopic worms. To activate them, the powder is poured into warm water with sugar and allowed to stand for about half an hour.

The nuances of working with yeast:

  • The best place for yeast to work is in the oven.. Turn on the light and place the bowl with the starter. In this cozy place, yeast always feels comfortable.
  • The yeast must be poured with warm water (up to 40 degrees) to start the fermentation process. In cold water, fungi are not activated, and too hot water will simply kill the living culture. You can determine the desired water temperature in a simple way - touch it with your finger. If the finger is comfortable (this should be body temperature), then the yeast will be fine.
  • Yeast can be used dry or live pressed. The main thing is that they are not expired. Even if expired yeast ferments, it will impart an unpleasant sour smell to the dough.

How to serve

The reason they love pancakes is that they can be eaten with jam, marmalade, confiture or jam. For those who are not very concerned about their figure, there are options for serving with condensed milk, honey, melted chocolate, nut or chocolate spread. They must be served with sour cream or yogurt in a separate bowl. Cooks use special toppings for serving - ready-made toppings with different flavors.

Place the pancakes in a stack on a plate, place chopped or whole berries next to them, and garnish the pancakes with a mint leaf. Top the pancakes with jam or honey. If the honey has thickened, you can warm it up a little in a water bath or in the microwave.

If you have frozen or fresh berries, you can quickly make a topping for your pancakes. To do this, place the berries in a saucepan, add a couple of tablespoons of water, add a little sugar and bring to a boil over low heat. At the moment of boiling, add corn starch and cook thick jelly. You can pour it over the pancakes right in the plate.

If you have fresh berries in stock, you can’t imagine anything better. Simply place the berries on a plate and lightly sprinkle everything with powdered sugar and cocoa powder. Although you can do without them. By the way, berries can be added directly to the dough. But this must be done at the last moment so that they do not release the juice. Better yet, pour a portion of the dough into the frying pan and put a few raspberries, cherries or blueberries on it.

It is best to wash down pancakes with warm milk or kefir. Of course, fluffy pancakes are best eaten piping hot. But if there is some left over the next day, they can be reheated in a frying pan with a lid or in the microwave. Pour some water into the frying pan (they already have enough oil) and heat a little under the lid. If you reheat in the microwave, place a small cup of water next to it - this will make the pancakes fluffy and soft.

Whatever recipe you choose - with or without yeast - the taste and appearance of the pancakes depends on some tricks.

  • Flour for flatbreads must be sifted - then the pancakes will be fluffy. Moreover, this must be done at least 3 times.
  • To ensure that the dough is laid out well in the pan, the spoon should be wetted in water each time.
  • Yeast must be added to the flour, and not vice versa - then the dough will not settle.
  • The taste of pancakes does not depend on the type of yeast - dry or pressed.
  • Instead of water, you can use low-fat kefir, milk or whey.
  • The more acidic the dairy product used, the fluffier the pancakes.
  • Place the flatbreads on a well-heated frying pan.

  • There should be a lot of oil for frying, otherwise the pancakes will not only not rise, but also not bake. Some lovers of fluffy flatbreads advise cooking them in the oven. Fans of nonstick cookware will be disappointed: the coating doesn't require oil, so it's great for frying pancakes, but not pancakes.
  • Citric acid must be added after the flour, otherwise the pancakes will not rise, but, on the contrary, will settle.
  • Before serving, pour jam or sour cream over the still hot pancakes - they will soak in and become even tastier.

To please your loved ones with a delicious breakfast, prepare pancakes using water. The recipe for fluffy pancakes, even without yeast, guarantees their transformation into a favorite dish for the whole family. Young children love pancakes with fruit, and adults can complement their meal with something more “substantial”, such as sour cream or caviar. The main thing is to make the dough correctly, and there are no restrictions in the choice of additives.
