Cutting boards are such an essential utensil in the kitchen. Do we pay enough attention to such an important issue as cutting board care?

We’ve probably seen this more than once at someone’s house (here we can sometimes wrinkle our nose and think: “what a dirty little thing,” or: “I’ll never set foot here again”). Either we don’t wash the board thoroughly (I’ll wash it later), or we mix it up and use it for other purposes, or even there’s only one board in the kitchen for any preparation.

Of course, it would be correct if there were several cutting boards. It is necessary to have different kitchen boards: for dough, for raw and cooked fish, meat and vegetables, for sausages and cheeses, for bread, for onions and garlic, for herbs. But that's a completely different conversation. Here everyone decides for himself - which ones, why and how many of them are needed.

But how to care for them? It turns out that ignoring this issue is sometimes fraught with unpleasant consequences, especially during the hot season and on holidays. We need to take care of ourselves and our family. It would seem like a small thing, but we use this utensil every day and it is important for our mood and health.

Dirty and, especially, wet kitchen boards, like those, are inhabited by a lot of all sorts of evil spirits, which multiply and multiply.

Wooden boards are rightfully considered more hygienic than all others, but they require particularly careful care, starting from the moment of purchase. Experts advise immediately treating them with hot (70-100 degrees) edible mineral or petroleum jelly (pharmaceutical oil), after lightly sanding them with fine sandpaper if the surface is not completely smooth.

It is not recommended to use any fats, butter or vegetable oils, with the exception of flaxseed, for these purposes, so that later, having become rancid, they do not spoil the taste and smell of the prepared products. And there can be no talk about technical oils.

You should moisten a cotton swab with hot oil and lubricate both surfaces and the end of the boards, thoroughly saturating them. And this “training” must be repeated several times every couple of hours.

In the future, it is advisable to periodically repeat this procedure, cleaning the surface with fine sandpaper if necessary and again lubricating it with hot mineral oil. But the need for this action depends on the load on this subject. It’s one thing when a person lives alone and doesn’t cook much, but it’s another thing when big family and cook a lot. Well, restaurants have their own methods and processing times.

To tell the truth, I use the old village method - I scrape it with a knife, wash it thoroughly, and dry it even more thoroughly. And then I rub it again with my favorite oil - linseed. True, very rarely, and not as carefully as the first time after purchase.

In order for your wooden kitchen boards to serve you faithfully for many years, look beautiful and be protected from bacteria getting inside, be prepared to spend at least half a day on their initial processing. But you will be very satisfied with the result of your work.

Personally, I rub in the oil with clean hands. It’s more pleasant for me to feel the wood and massage my palms. I’ll drink it stronger and go about my business. The first time, in total, it took more than a day, but at least I didn’t stand over them as if tied, but carried out this operation together with the next dishwashing, or at the monitor screen, looking at the programs that interested me.

Wooden boards, unlike others, are good because they themselves “know how to deal” with harmful bacteria. But nevertheless, after processing raw meat and fish, you should clean them especially carefully.

Bamboo, stone, glass, plastic or plywood cutting boards should be washed after use. hot water with soap, after removing any remaining food from them, wipe and dry thoroughly. And it wouldn’t hurt to scald a wooden board with boiling water after washing.

Do not keep the boards wet or wash them in dishwasher. The boards should be dried and stored in an upright position and not close to each other. It should also always be dry underneath. And sometimes you look at a beautiful thing, you lift it up, and underneath there is a layer of mold.

It is very good to periodically treat all kitchen boards with a solution of vinegar or lemon juice, especially after cutting raw or odor-bearing foods. I prefer to remove the fishy smell with either 9% vinegar or a lemon cut in half.

You can also remove it unpleasant odors salt. True, opinions differ here - dry or wet method. I rub it right away when I wash it. I’m too lazy to go back to this again, and it’s not entirely clear - the salt draws out the remaining moisture from the board or, conversely, attracts it from the air.     I only have (so far) two boards, which I wash every time (after cutting any ingredient). For non-frozen products, as well as meat on the bone, I most often use a ceramic knife. In all other cases, only metal.

BBK-3 is a solution of borax and boric acid. It is relatively safe for people and animals, and also has excellent penetrating ability.

GR-48 is a drug based on pentachlorophenol. It protects the boards not only from the negative effects of moisture and biodegradation, but also from blue stains.

Often, products are used that contain several active ingredients at once - for example, CCC based on chromium and zinc chloride. However, this impregnation has 2 significant disadvantages: toxicity and the possibility of staining the wood.

Oily and pasty antiseptics

Oily antiseptics considered the strongest of their kind. They are used to protect wooden walls from the negative effects of moisture and soil. However, oily impregnation also has two serious disadvantages: a strong unpleasant odor and the ability to color the wood dark brown.

Paste antiseptics consist of three main components:

  1. Water-soluble antiseptic.
  2. Filler.
  3. Clay or bitumen as a binder.

Organically soluble antiseptics are products like PL containing pentachlorophenol and petroleum products. However, due to their high toxicity, they are rarely used.

The use of organically soluble antiseptics is justified for treating wood when exposed to moisture in order to avoid drying. When using these products, you need to take care of personal protection: gloves and a respirator.

How to apply impregnation to wood

In order to treat wood with an antiseptic composition, use different methods. Most effective way Immersion of the material in baths with the active substance is considered. The only disadvantage of the method is its high cost.

  1. Silicate glue.
  2. Soda and vinegar.
  3. Potassium dichromate solution.
  4. Copper sulfate.
  5. Resin.
  6. Salt and boric acid.

The easiest way is to use silicate glue. It is necessary to dilute it with water, and apply the resulting solution to areas where biodegradation occurs. You can also treat the rotting areas with soda, and spray vinegar from a spray bottle on top.

Potassium dichromate is used by mixing in equal proportions with sulfuric acid. The resulting composition should be used to treat not only the boards on the street, but also up to 50 cm of the soil layer.

Another effective one improvised means to prevent wood rotting – copper sulfate. To prepare the composition, take 100 g of the substance per 10 liters of water.

For external processing You can use resin, as well as a mixture of 1 kg of salt and 50 g of boric acid, which are stirred in 5 liters of boiling water. This composition must be applied to the wood several times, waiting a couple of hours so that the product has time to be absorbed.

Processing using the Finnish method

The Finnish method is a special way of processing wood to protect it from moisture and rot. You will need a set of ingredients:

  • salt;
  • flour;
  • water;
  • slaked lime;
  • inkstone.

This composition stays on the material for a very long time without being washed off with water. Despite the safety of the method, it is recommended to use it only for protective treatment wood intended for fences and roofs.

The listed ingredients must be mixed to a consistency reminiscent of sour cream, and the main part of the mixture should be based on flour and water. After thorough mixing, the composition should be slightly warmed over low heat, and when it becomes warm, you need to quickly apply it to the boards.

After the first layer has dried, it is necessary to process the material again. If the composition has cooled down by this time, it will need to be heated again.

Caring for a cutting board is what you need to ensure that your wooden cutting board looks attractive for a long time and is safe for your health. How to wash a cutting board

A new board should be treated with oil twice, at intervals of several hours, so that the oil is well absorbed. Simply remove excess oil that has not been absorbed with a cloth or paper towel.

The recipe for the product is not complicated. You need to take one part wax and 4 parts Vaseline oil.

Heat the oil in a water bath and dissolve the wax shavings in it. To speed up the process, you can heat the mixture in microwave oven.

Before the procedure, you can warm it up a little in the microwave (if it fits there). Next, cover it on all sides with the prepared mixture with a brush or clean cloth. Allow the mixture to absorb and harden.

Impregnation with a mixture differs from impregnation with just oil - it is considered more durable and strong, it can close not only pores, but also small cracks and cuts. This treatment of a wooden plank must be repeated periodically - at least once every three months.

You may have heard that wooden cutting boards should be oiled, or you may have even done it yourself. Why is this required, and are any oils suitable? The simplest and affordable option- this is Vaseline oil, which can be found in the pharmacy - with it the cutting board will find a second life.

Why do you need oil?

  • The oil moisturizes the natural material, which without impregnation tends to dry out over time. Boards that undergo regular treatment last longer and maintain a presentable appearance.
  • Oil creates a natural protective film on the surface of the wood, preventing the absorption of odors and the penetration of bacteria deep into the board. It’s good if the product itself is of high quality and has properties like Epicurean boards, which do not absorb liquids and odors

How to oil a cutting board?

Gently pour mineral oil onto the surface and rub with a soft cloth. Coat the board on all sides, not forgetting the sides. Don't be afraid to pour too much oil - the wood will take as much as it needs, and the excess will simply be absorbed into the fabric.

Pure mineral cutting board oil will penetrate deeply and close the pores. This treatment should be repeated from time to time, at least 3 times a year.

It will protect the surface from wear, make it smooth in appearance and to the touch, and prevent moisture from penetrating inside. This is done like this: the oil is heated in a water bath, wax shavings are added to it and mixed until the mixture is homogeneous. When using a microwave, you can place the container with the mixture for 30-40 seconds until the wax dissolves.

While the solution is hot, you need to coat all surfaces of the board with it. As it cools protective covering will become stronger, after its formation the board should be polished with a soft cloth. If you are using a new untreated board, then the procedure should be repeated after 6 hours and do not forget to renew the coating once a month.

Such a simple and quick procedure as impregnating a cutting board with oil will extend its service life for a long time. Moreover, if the product is expensive and of high quality, caring for it is simply necessary. Of course, even in the absence of any care, a wooden board can be successfully used, but literally in a year it will “grow old” and lose its attractive appearance.

Disinfection is a mandatory procedure
