Happy New Year

The guys are divided into teams of 11 people, each participant is given a felt-tip pen or marker. For each team, easels with whatman paper are located at the same distance. Each participant must jump in a bag, like a wolf in the cartoon “Well, Wait a minute!” to the easel and write one letter at a time so that at the end you get the phrase “Happy New Year.” So, at the command “start”, the first participants jump in a bag to the easel and write the letter “C”, then jump back and pass the baton to the second participants, the second write the letter “N”, the third - “O” and so on. This type of famous grape wine gets its name from French province Champagne, where this drink was originally produced. It was first made by the monk Dom Perignon in 1679; one of the champagne brands still bears his name. Nowadays, each owner of a vineyard in Champagne, and there are about 15 thousand of them, produces his own variety of champagne.

The technology for making this wine drink is described in detail in the encyclopedia of F.A. Brockhaus and I.A. Efron. It is noted here that, under other identical conditions (soil, climate, grape variety, etc.), the production of champagne differs in a number of features. First, the juice obtained from pressing grapes, mainly black and red varieties, was poured into barrels, where the initial fermentation process took place. The next stage is the formation of carbon dioxide as a result of secondary fermentation of wine, which, lingering in the bottle, dissolves in the wine and gives it effervescence. One of the final stages of making champagne is the removal of sediment from yeast, etc., that accumulates in each bottle. This occurs as a result of a 4-5 week preparatory procedure using special techniques. After refilling the bottles with the same wine, add required amount liqueur, giving sweet taste. Wine obtained as a result of natural fermentation grape juice special varieties and saturated with carbon dioxide as a result of secondary fermentation in hermetically sealed vessels, and is called champagne.

Champagne is classified according to sugar content (in percentage): brut (0.3), very dry (0.8), dry (3), semi-dry (5), semi-sweet (8), sweet (10). Dry champagne is most often used to open a festive feast. Semi-dry varieties are usually served with small game and chicken. Sweet champagne is recommended to be served before dessert and chilled, when the advantages of this drink stand out especially clearly. It is better to store champagne bottles horizontally.
